Preheat your Blackstone Griddle over low to medium-low heat.You don't want the griddle too hotβthe goal is to slowly crisp the bread while warming the peanut butter and bananas inside.
2. Build the Sandwich
Spread a generous layer of peanut butter onto the inside of each slice of bread.Arrange the sliced bananas over two pieces of bread and drizzle generously with honey.If you're using cinnamon, sprinkle a little over the bananas.Top with the remaining slices of bread.
3. Prepare for the Griddle
Spread a thin, even layer of mayonnaise or softened butter over the outside of both sides of each sandwich.

Place the sandwiches directly onto the Blackstone.Cook for approximately 2β3 minutes per side, checking occasionally, until the bread is beautifully golden brown and crispy.Flip carefully and cook the second side until golden.
5. Slice & Serve
Remove the sandwiches from the griddle and let them rest for about a minute.Slice them in half and finish with another light drizzle of honey if you're feeling it.Then get after it while they're still warm.
