Blackstone Loaded Chicken & Bacon Potato Bowls 🔥🥔

Sometimes the best meals don't need anything complicated.
Crispy potatoes. Juicy chicken. Bacon. Melted cheese. And a whole lot of Blackstone goodness. 😂🔥
These Blackstone Loaded Chicken & Bacon Potato Bowls are naturally gluten-free when you use gluten-free seasonings and toppings, and they're exactly the kind of meal I love making on the griddle.
Pile everything into a bowl, hit it with your favorite toppings, and get after it!

Ingredients

For the Potatoes
2 lbs baby red or Yukon Gold potatoes
2 tablespoons avocado or olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
½ teaspoon onion powder
Kosher salt and black pepper, to taste
2 tablespoons water
For the Chicken
1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces

For the Bowls
8 strips bacon, cooked and chopped
1½ cups shredded cheddar cheese
½ cup sour cream
2 green onions, sliced
Fresh diced tomatoes, optional
Hot sauce, optional
Check the labels on seasonings, bacon, cheese, sour cream, and hot sauce to ensure they're certified or labeled gluten-free when needed.

Directions

1. Get the Potatoes Started
Cut the potatoes into small bite-sized pieces.
Preheat one side of the Blackstone to medium heat. Add the oil followed by the potatoes.
Season with garlic powder, smoked paprika, onion powder, salt, and pepper.
Cook for about 5 minutes, tossing occasionally.
2. Steam Those Potatoes 🔥
Add approximately 2 tablespoons of water around the potatoes and cover them with a melting dome.
Let them steam for 5–7 minutes to help soften the centers.
Remove the dome and let any remaining moisture cook away.
Now spread those potatoes out and let them get golden and crispy.
3. Cook the Bacon
Cook the bacon until crispy.
Remove it from the Blackstone, let it cool slightly, then give it a rough chop.
And yes...
Try not to eat half of it while everything else cooks. 😂
4. Get the Chicken Down
Add a little oil to another section of the Blackstone.
Spread the chicken into a single layer and season with garlic powder, smoked paprika, onion powder, salt, and pepper.
Let it sit for a couple minutes before tossing so you get some good color.
Continue cooking until the chicken reaches 165°F internally.
5. Bring Everything Together
Combine the crispy potatoes and chicken on the griddle.
Add most of the chopped bacon and give everything a good toss.
Sprinkle shredded cheddar over the top.
Turn the heat down and cover with your melting dome just long enough to get that cheese ridiculously melted. 🧀🔥
6. Build the Bowls
Load each bowl with the cheesy chicken, potatoes, and bacon.
Finish with sour cream, green onions, tomatoes, additional bacon, and hot sauce if you want some heat.

Don't spend 20 minutes chasing raw potatoes around your Blackstone. 😂
A splash of water and a melting dome will soften the centers. Once they're tender, remove the dome, let all that moisture disappear, spread the potatoes out, and then let the Blackstone give you those crispy edges.
