Blackstone Loaded Chicken & Bacon Potato Bowls π₯π₯
Ingredients
For the Potatoes2 lbs baby red or Yukon Gold potatoes2 tablespoons avocado or olive oil1 teaspoon garlic powder1 teaspoon smoked paprikaΒ½ teaspoon onion powderKosher salt and black pepper, to taste2 tablespoons waterFor the Chicken1Β½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces1 tablespoon avocado or olive oil1 teaspoon garlic powder1 teaspoon smoked paprikaΒ½ teaspoon onion powderKosher salt and black pepper, to tasteFor the Bowls8 strips bacon, cooked and chopped1Β½ cups shredded cheddar cheeseΒ½ cup sour cream2 green onions, slicedFresh diced tomatoes, optionalHot sauce, optionalCheck the labels on seasonings, bacon, cheese, sour cream, and hot sauce to ensure they're certified or labeled gluten-free when needed.Directions
1. Get the Potatoes StartedCut the potatoes into small bite-sized pieces.Preheat one side of the Blackstone to medium heat. Add the oil followed by the potatoes.Season with garlic powder, smoked paprika, onion powder, salt, and pepper.Cook for about 5 minutes, tossing occasionally.2. Steam Those Potatoes π₯Add approximately 2 tablespoons of water around the potatoes and cover them with a melting dome.Let them steam for 5β7 minutes to help soften the centers.Remove the dome and let any remaining moisture cook away.Now spread those potatoes out and let them get golden and crispy.3. Cook the BaconCook the bacon until crispy.Remove it from the Blackstone, let it cool slightly, then give it a rough chop.And yes…Try not to eat half of it while everything else cooks. π4. Get the Chicken DownAdd a little oil to another section of the Blackstone.Spread the chicken into a single layer and season with garlic powder, smoked paprika, onion powder, salt, and pepper.Let it sit for a couple minutes before tossing so you get some good color.Continue cooking until the chicken reaches 165Β°F internally.5. Bring Everything TogetherCombine the crispy potatoes and chicken on the griddle.Add most of the chopped bacon and give everything a good toss.Sprinkle shredded cheddar over the top.Turn the heat down and cover with your melting dome just long enough to get that cheese ridiculously melted. π§π₯6. Get those little guys onto the griddle, season them up, give them a quick steam underneath the dome and then let them CRISP.
Meanwhile, bacon is doing what bacon does.

Then we’ve got chunks of seasoned chicken hitting another section of the Blackstone.
Once everything has some beautiful color, bring the chicken and potatoes together, throw that bacon into the party and cover the whole thing with shredded cheddar.
Dome goes down.
Cheese melts.

Scoop everything into bowls and finish them however you want.
Sour cream. Green onions. Tomatoes. Hot sauce. More bacon.

It’s simply really good Blackstone food that also happens to be gluten-free when you choose appropriately labeled ingredients.
