Chicken Veggie Quesadillas

Sometimes the best recipes are the ones that bring together simple ingredients and bold flavors.

These Ultimate Chicken Veggie Quesadillas have become one of my favorite meals to make on the Blackstone because they’re loaded with everything I love—juicy seasoned chicken, colorful vegetables, crispy tortillas, and plenty of melted cheese.

One of my favorite things about cooking on the Blackstone is how every ingredient gets its own chance to shine. The peppers become slightly sweet, the onions caramelize, the broccoli develops just a little char, and the zucchini adds a fresh bite that balances everything perfectly.

Chicken Veggie Quesadillas

🛒 Ingredients
Chicken
2 boneless, skinless chickenbreasts, diced
2 tbsp olive oil
2 tsp taco seasoning
1 tsp garlic powder
1 tsp onion powder
Salt & pepper to taste
Vegetables
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, diced
1 cup broccoli florets
½ sweet onion, sliced
1 tbsp olive oil
Quesadillas
4 large flour tortillas
3 cups shredded Mexican blendcheese
Fresh cilantro
Greek Yogurt
Hot sauce (optional)
👨‍🍳 Directions
1. Cook the Chicken
Preheat your Blackstone Griddle to medium-high heat.
Season the diced chicken with taco seasoning, garlic powder,onion powder, salt, and pepper. Add olive oil to the griddle and cook thechicken for 6–8 minutes until golden brown and fully cooked.
Move to the warming zone.
2. Sauté the Vegetables
Add olive oil to the griddle.
Cook:
peppers
zucchini
broccoli
onions
Cook until tender with slight char, about 6–8 minutes.
Mix the vegetables with the cooked chicken.
3. Build the Quesadillas
Lay tortillas directly on the griddle.
Sprinkle cheese over half of each tortilla.
Top with the chicken and veggie mixture.
Fold closed.
Cook 2–3 minutes per side until golden brown and crispy.
4. Finish
Top with:
Greek Yogurt
Fresh cilantro
Hot sauce
Serve immediately.
