Blackstone Chicken Smash Burger Tacos 🌮🔥

Crispy, cheesy, juicy, and completely egg-free!
Now THIS is a fun twist on Taco Tuesday! We're taking seasoned ground chicken, smashing it directly onto a tortilla, and cooking it on the Blackstone until it's golden and delicious. Add melted cheese, shredded lettuce, pickles, and a little egg-free burger sauce, and you've got something special!

Ingredients

Chicken Smash Tacos
1½ lbs ground chicken
8 small flour tortillas (check for egg-free ingredients)
1 tbsp Blackstone Essential Blend Seasoning, or to taste
8 slices American cheese
1 cup shredded lettuce
½ cup diced pickles
¼ cup finely diced red onion
A little avocado oil for the griddle
Egg-Free Burger Sauce
½ cup egg-free mayonnaise
2 tbsp ketchup
1 tbsp yellow mustard
1 tbsp finely chopped pickles
½ tsp smoked paprika
½ tsp garlic powder

Directions

1. Make the Burger Sauce. Mix the egg-free mayonnaise, ketchup, mustard, chopped pickles, smoked paprika, and garlic powder in a bowl. Refrigerate until ready to serve.
2. Prep the Chicken. Divide the ground chicken into 8 equal portions. Spread each portion thinly and evenly over one side of a tortilla, pressing it right to the edges. Season with Blackstone Essential Blend.
3. Fire Up the Blackstone! Preheat the griddle to medium-high heat. Add a light coating of avocado oil.
4. Smash Those Tacos! Place each tortilla chicken-side down onto the hot griddle. Press gently with a spatula to ensure good contact. Cook for approximately 4–5 minutes, until the chicken is browned and cooked through to 165°F.
5. Flip & Add Cheese! Flip each taco so the tortilla side is on the griddle. Add a slice of American cheese and cook another 1–2 minutes until the tortilla is lightly crispy and the cheese melts.
6. Load 'Em Up! Remove from the griddle and top with shredded lettuce, pickles, red onion, and that homemade egg-free burger sauce.
7. Fold & Enjoy! Fold each tortilla like a taco and dig in!

🔥 Bright Spots Pro Tip

Spread it thin. Smash it flat!
Ground chicken is softer and stickier than ground beef. Spread it evenly across the tortilla before it hits the Blackstone so you get a consistent cook and a beautiful crust.
Use a food thermometer to verify the chicken reaches 165°F.
