Blackstone Chicken Mexican Pizzas 🔥🌮

Crunchy, cheesy, loaded, and built right on the Blackstone! These Blackstone Chicken Mexican Pizzas layer creamy refried beans, sautéed chicken and onions, melted shredded cheese, and a crunchy tostada between tortillas before getting finished with lettuce, tomatoes, feta, and hot sauce.
You get a little bit of everything in every bite—crispy, creamy, cheesy, fresh, and spicy. 🔥

Ingredients

4 large flour tortillas
4 crunchy tostada shells
1 can refried beans
1½ lbs boneless, skinless chicken breast, diced into bite-sized pieces
1 large onion, sliced or diced
2 cups shredded cheese
2 cups shredded lettuce
2 Roma tomatoes, diced
½ cup crumbled feta cheese
Hot sauce, to taste
1–2 tablespoons avocado or olive oil
Salt and black pepper, to taste

Directions

1. Preheat the Blackstone
Preheat your Blackstone Griddle to medium heat. Add a little oil to one side of the griddle for cooking the chicken and onions.
2. Sauté the Chicken & Onions
Add the chicken and onions to the griddle.
Season with salt and black pepper and cook, tossing occasionally, until the onions are tender and the chicken develops some nice color.
Continue cooking until the chicken reaches an internal temperature of 165°F.
Move the chicken and onions to a cooler section of the griddle.
3. Warm the Refried Beans
Place the refried beans in a small griddle-safe pan or saucepan and warm them until they're easy to spread.
4. Build the First Layer
Lay a flour tortilla on the griddle.
Spread a layer of warm refried beans across the tortilla.
Add a generous helping of the sautéed chicken and onions followed by shredded cheese.
5. Bring the Crunch 🔥
Place a crunchy tostada shell directly on top of the chicken and cheese.
Add another sprinkle of shredded cheese to help everything come together.
6. Finish the Mexican Pizza
Let everything cook until the bottom tortilla becomes golden and crispy and the cheese is melted.
Use your spatulas to carefully transfer the Mexican pizza from the griddle to a plate.
7. Load It Up
Finish with shredded lettuce, diced tomatoes, crumbled feta cheese, and as much hot sauce as you like.

We’re making Mexican pizzas. 😂🔥

And these aren’t your ordinary Mexican pizzas.

We’re taking them straight to the Blackstone Griddle.

First up, chicken and onions hit the griddle. I want some good color on that chicken while those onions soften and pick up all that flavor right alongside it.

Then it’s time to start building.

A flour tortilla gives us our base, followed by creamy refried beans, that freshly sautéed chicken and onion mixture, and plenty of shredded cheese.

But then comes my favorite part.

The crunchy tostada. 🔥

Drop that right into the middle and suddenly you’ve got two completely different textures happening in the same bite.

Once everything is hot and the cheese is melted, get it off the griddle and hit it with the fresh stuff.

Shredded lettuce.

Fresh tomatoes.

Crumbled feta.

And, of course…

HOT SAUCE. 🌶️🔥

Now you’ve got crispy tortilla, creamy beans, juicy chicken, sautéed onions, melted cheese, that tostada crunch, cool lettuce and tomatoes, salty feta, and a little heat bringing the whole thing home.
