Venison burgers can be incredible on the Blackstone—you just have to remember that venison is much leaner than beef. Adding a little bacon brings in the fat, keeps the burgers juicy, and gives you one heck of a burger.

Ingredients

Venison Burgers
1½ lbs ground venison
6 strips bacon, finely chopped
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
1 tsp kosher salt
½ tsp black pepper
For the Burgers
4 brioche buns
4 slices sharp cheddar cheese
1 medium onion, sliced
Lettuce
Tomato, sliced
Pickles
Your favorite burger sauce or mayo
Avocado oil, as needed

Directions

1. Prep the BurgersCombine the ground venison, finely chopped bacon, Worcestershire, garlic powder, onion powder, salt, and pepper. Gently form into four patties.
2. Fire Up the Blackstone 🔥Preheat the Blackstone to medium-high heat and lightly oil the griddle.
3. Griddle the OnionsAdd the sliced onions and cook until softened and caramelized. Move them to a cooler section of the griddle.
4. Cook the Venison BurgersPlace the patties on the hot griddle and let them develop a good crust before flipping. Cook ground venison to 160°F internally.
5. Add the CheeseTop each burger with sharp cheddar during the final minute of cooking. Use a dome if needed to get that cheese ridiculously melty. 😂🔥
6. Toast the BunsPlace the buns cut-side down on the griddle for 30–60 seconds until lightly toasted.
7. Build It!Sauce the bun and stack it with your venison burger, caramelized onions, lettuce, tomato, and pickles.

Venison is lean—don't treat it exactly like beef. Adding bacon gives the burger extra fat and flavor while helping keep it juicy. And don't keep cooking it after it reaches temperature!

Mixing a little bacon into the venison adds some much-needed fat and brings another layer of flavor. Then we’re throwing those patties onto a hot Blackstone, building that crust, melting sharp cheddar over the top, and finishing everything with caramelized onions.
