Ingredients

2 large sweet potatoes, peeled and cut into ½-inch cubes
2 tbsp avocado or olive oil
½ tsp kosher salt
½ tsp cinnamon
¼ tsp smoked paprika
¼ tsp black pepper
Peanut Butter Glaze
¼ cup creamy peanut butter
2 tbsp honey
1 tbsp soy sauce
1 tbsp warm water, plus more if needed
1 tsp fresh lime juice
½ tsp garlic powder
Optional: pinch of red pepper flakes

Directions

1. Make the Peanut Butter GlazeWhisk together peanut butter, honey, soy sauce, warm water, lime juice, garlic powder, and red pepper flakes if using. Add another splash of warm water if needed to make it easily drizzleable.
2. Get the Blackstone ReadyPreheat the Blackstone to medium heat and add a light coating of oil.
3. Cook the Sweet PotatoesAdd the cubed sweet potatoes in a single layer. Season with salt, cinnamon, smoked paprika, and black pepper.
Cook for about 10–12 minutes, tossing occasionally to develop some color on all sides.
4. Steam Them TenderAdd a small splash of water beside the potatoes and cover with a melting dome for 3–5 minutes. This helps soften the centers without burning the outside.
5. Get Them CrispyRemove the dome and let any remaining moisture cook away. Toss the potatoes for another few minutes until the edges are browned and caramelized.
