🛒 Ingredients

Hibachi Chicken

1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces1 tbsp avocado oil1 tbsp butter1 tbsp soy sauce1 tsp garlic powder½ tsp onion powder½ tsp black pepper

Hibachi Steak

1½ lbs sirloin or ribeye steak, cut into bite-sized pieces1 tbsp avocado oil1 tbsp butter1 tbsp soy sauce1 tsp garlic powder½ tsp black pepper½ tsp kosher salt

Fried Rice

6 cups cooked and completely cooled white rice3 large eggs1 cup frozen peas and carrots, thawed½ yellow onion, finely diced3 tbsp butter, divided3 tbsp soy sauce1 tbsp sesame oil1 tsp garlic powder½ tsp black pepper3 green onions, sliced

Garlic Butter

4 tbsp butter, softened3 cloves garlic, finely minced1 tsp soy sauce½ tsp garlic powder

Easy Yum Yum Sauce

1 cup mayonnaise2 tbsp ketchup1 tbsp melted butter1 tbsp rice vinegar1 tsp sugar½ tsp garlic powder½ tsp smoked paprika2–3 tbsp water, as needed

👨‍🍳 Directions

1. Make the Garlic Butter

Combine the softened butter, fresh garlic, soy sauce, and garlic powder in a small bowl.
Mix until completely combined and set aside.
You're going to use this throughout the cook, so keep it close to the Blackstone.

2. Make the Yum Yum Sauce

Combine the mayonnaise, ketchup, melted butter, rice vinegar, sugar, garlic powder, and smoked paprika.
Whisk until smooth.
Add water one tablespoon at a time until the sauce reaches your desired consistency.
Refrigerate until you're ready to serve.

3. Preheat the Blackstone

Preheat your Blackstone Griddle with multiple cooking zones.
You'll want a medium-high to high heat zone for searing the steak and chicken and a medium heat zone for your fried rice.
Add a thin layer of avocado oil to the cooking surface.

4. Start the Fried Rice

Add 1 tablespoon of butter to the medium-heat section of the griddle.
Add the diced onion and peas and carrots.
Cook for approximately 2–3 minutes, tossing occasionally.
Move the vegetables to the side.
Add another tablespoon of butter and crack the eggs directly onto the griddle.
Scramble the eggs with your spatula until just cooked, then combine them with the vegetables.

5. Add the Rice

Add the remaining tablespoon of butter followed by the cold cooked rice.
Spread the rice across the griddle into a thin layer.
Let it sit against the cooking surface for a minute before tossing.
Add soy sauce, sesame oil, garlic powder, and black pepper.
Mix the vegetables and scrambled eggs into the rice.
Continue cooking for approximately 5–7 minutes, tossing occasionally, until the rice is hot with some slightly crispy pieces throughout.
Finish with sliced green onions.
Move the fried rice to a cooler section of the Blackstone.

6. Cook the Hibachi Chicken

Add avocado oil to the hotter section of the griddle.
Place the chicken onto the Blackstone and spread it into a single layer.
Season with garlic powder, onion powder, and black pepper.
Let the chicken develop some color before tossing.
Add the butter and soy sauce and continue cooking until the chicken reaches an internal temperature of 165°F.
During the final minute, add a spoonful of your garlic butter and toss everything together.
Move the chicken to a cooler section.

7. Sear the Steak

Make sure you've still got a nice hot section of griddle.
Add avocado oil followed by the steak.
Season with garlic powder, black pepper, and kosher salt.
Don't immediately start moving it around.
Give those pieces some time against the Blackstone so you develop a beautiful seared crust.
Toss the steak and add the butter and soy sauce.
During the final minute, add another spoonful of garlic butter and toss until the steak is cooked to your preferred doneness.

8. Bring It All Together

Now you've got options.
Keep your chicken, steak, and fried rice separate so everybody can build their own hibachi plate.
Or bring everything together in the middle of the Blackstone and give it one big toss.
Either way, finish with a little additional garlic butter if you're feeling dangerous. 😂

9. Serve

Load up the plates with fried rice, hibachi chicken, and steak.
Drizzle with homemade Yum Yum Sauce or serve it alongside for dipping. Siracha is also a great addition drizzled over the top (Shown in picture).
Finish with additional sliced green onions and get after it. 🔥

🌟 Bright Spots Pro Tip

Yesterday's rice is your friend!
If you want really good Blackstone fried rice, don't cook rice and immediately throw it onto the griddle.
Fresh rice contains a lot of moisture and tends to steam and clump together.
Cook your rice the day before, spread it out, let it cool, and refrigerate it overnight.
That cold, dry rice will separate much more easily on the Blackstone and develop those slightly crispy pieces that make fried rice so good.
And when it comes to the steak and chicken, give them room! Don't pile everything into one giant mound. More contact with the hot griddle means more sear, and more sear means more flavor.
